VINTAGE AMERICAN GOULASH WITH CAMPBELL’S SOUP

I haven’t seen this recipe anywhere, so it may be original!  It was rumored in my family that Grandma Mary invented this during war time for a cheap meal—-honestly, I think those recipes that women invented themselves during times of poverty were the best recipes ever.

Ingredients:

1 pound ground beef

2 cans Campbell’s Beef with Vegetables & Barley soup

3 or 4 medium potatoes peeled and cut up like French fries

2 cans water (using the emptied soup cans)

 Instructions:

Brown the ground beef.  I use 80% lean and I don’t drain it, but it’s up to your taste of course.  Place in 9×13 casserole dish, add the two cans of soup and the two cans of water, mix it all up.

Layer the top with the potatoes.

Bake at 425 for about an hour OR until potatoes are brown, crispy

SERVE WITH BISCUITS
